Swedish Christmas Ham

Classic roast ham
2 egg yolks
3½ tbsp mustard
½ tbsp sugar
3½ tbsp breadcrumbs

Mix all the ingredients except the breadcrumbs
• Cut away the rind and possibly some fat from the ham
• Brush mixture over the ham and then sprinkle it with breadcrumbs
• Roast at 400°F in oven, until ham turns golden in color.

Herb and honey roast ham
½ cup fresh herbs, e.g. parsley, oregano, thyme, basil
1 tbsp olive oil
3½ tbsp liquid honey
3 tbsp mustard
1 egg yolk
salt and black pepper
3½ tbsp breadcrumbs

Mix herbs with olive oil
• Mix all ingredients except the breadcrumbs
• Cut away the rind from the ham
• Brush mixture over the ham and then sprinkle it with breadcrumbs
• Roast at 400°F in oven, until ham turns golden in color.
