Turkey roll with red pepper and chèvre

serves 8

TURKEY ROLL
2 turkey breasts
4 grilled red pepper,
cored and halved
3½ oz chèvre cheese
3½ tbsp crème fraiche
salt and black pepper
1 bunch rocket lettuce (arugula)
1¾ oz sugar peas

MIMOSA SALAD
2 pears
2 apples
1 mango
½ pineapple
1 cup crème fraiche
½ cup plain yogurt
salt and white pepper

TURKEY ROLL:
Preheat oven to 300°F
• Make a cut along each turkey breast so they can be opened flat, then pound them to a thickness of about 1/5 inch
• Mix the chèvre with the crème fraiche
• Arrange the turkey breast on a large sheet of aluminum foil, add salt and pepper
• Arrange red pepper and spread out the chèvre mix
• Using the foil, roll up the dish, and twist the ends of the foil
• Bake in oven about 30 minutes
• Let cool with foil on
• Meanwhile, finely chop the sugar peas
• Cut the turkey roll in slices
• Mix the rocket lettuce and sugar peas, and arrange them in a small
ball on the turkey roll
• Serve with mimosa salad.

SALAD: Peel all the fruit and dice
• Mix all ingredients and add salt and white pepper to taste.
