1 tsp fennel seeds
3½ tbsp liquid honey
1 tbsp butter
salt and white pepper
5½ oz chèvre cheese
Peel and chop root vegetables into half-inch cubes
• Fry root vegetables in butter, add fennel seeds and honey, brown until honey starts to caramelize, add salt and pepper
• Put root vegetable mixture in an ovenproof dish and bake at 400°F for about 15 minutes
• Sprinkle with crumbs of chèvre just before serving.
