1 dish / serves 4-8

2 lb potatoes
2 yellow onions
1 can anchovies (tinned sprat fillets)
approx. 125 g (4.4 oz)
white pepper
butter
¾ cup cream
½ - ¾ cup milk
breadcrumbs

Preheat oven to 450°F
• Peel and cut potatoes and onions into julienne strips • Chop the sprat fillets and mix with potato, onion, and white pepper, and put mixture in a greased ovenproof dish
• Pour in the anchovy brine, cream, and ½ cup of milk
• If required, use last ¼ cup of milk at the end of baking period
• Sprinkle with breadcrumbs
• Bake in oven for about 45 minutes, until the potato is soft
• Can also be baked in individual dishes – this will take about 20–30 minutes in the oven.
