1 pie plate, 8 inch in diameter
¾ cup all-purpose flour
¼ cup graham flour
1 stick of butter
2 tbsp water
1 egg white
7 oz grated
(a hard, aged, sharp
2/3 cup milk
1 grilled red pepper
salt and white pepper
Put flour, butter and water in a food processor and mix to form a pastry
• Line a greased pie plate (8 inch in diameter) with the dough and place in fridge for 30 minutes • Heat oven to 450°F
• Prick and baste pie shell with egg white • Pre-bake pie shell for 10 minutes.
Cut the grilled red pepper in strips • Mix all ingredients for the filling and pour into pie shell
• Reduce temperature to 350°F and bake for another 30 minutes
• This quiche is at its best when served at room temperature.
