Aebelskivers are essentially a Danish version of a “pancake ball.” Often eaten during Advent, they are traditionally served with powdered sugar and raspberry jam. The historical origins are unknown and the popular theories are tongue-in-cheek, e.g. invented by Vikings cooking pancakes in their dinged-up helmets. Aebelskivers are essentially celebrations of fats, sugars, and cute food. This class is a combination of demonstration and hands-on practice. Students will learn about basic sweet and savory batters, techniques for turning the aebelskiver in the pan, and different toppings that they can use. Lots of sampling is involved.

Instructor
Renata Fossett and Carstens Smith teach aebelskiver classes for Ingebretsen’s, who has kindly agreed to share them for this event. Both teachers enjoy researching food and creating new forms of traditional favorites.
