    Ingredients:
    500 g smoked fish (such as smoked salmon, whitefish, smoked Baltic herring, or mackerel)
    2 hardboiled eggs
    3 Tablespoons freshly chopped chives.
    Potato salad:
    2 pounds new potatoes
    1 Tablespoon rapeseed oil
    1 teaspoon salt
    200 g beans (such as string beans, wax beans, or sugar peas
    100 g cherry tomatoes
    8 black olives.
    Dressing:
    3 Tablespoons oil
    2 Tablespoons white wine vinegar
    1 garlic clove, crushed
    1 teaspoon Dijon mustard
    2 pinches salt.
    Guacamole:
    2 avocados
    half a jalapeno
    1 teaspoon fresh lemon juice
    2 pinches salt.

  • Instruction:
    Preheat oven to 440 F. Then begin with the potato salad: Brush the potatoes, and mix it with oil and pour it on a papered baking plate. If the potatoes are big, halfe them. Pour the salt over and roast them for about 30 minutes, or until they are soft and have gained some color.
    Cut the beans diagonally (if using string beans, boil them for 2 minutes – all other beans 1 minute in lightly salted water).
    Half the tomatoes, pour out the water from the beans and mix them with the potatoes, the tomatoes, and the olives. Mix the dressing together and pour over the salad. Guacamole: Peel and mash the avocadoes. Mix with jalapeno, lemon juice and salt. Serve the salad with the smoked fish, hardboiled egg halves, and guacamole. Sprinkle the chives on top.
