Ingredients for a salad for 4:
2 lbs new potatoes
500 g green asparagus
1 red onion, chopped
3 Tablespoons dill, chopped
1 Tablespoon mustard (coarse-grained)
1.5 Tablespoons fresh lemon juice
1 Tablespoon water
1/3 cup cold pressed rapeseed oil
salt and black pepper to taste


For the dressing: Stir mustard, lemon and water. Add oil, a little bit at a time. Taste with salt and pepper.
Boil the potatoes in lightly salted water. Let it cool slightly, and cut into smaller pieces. Pour the dressing on top.
Cut off the rough part of the asparagus, and boil in lightly salted water for approximately 4 minutes, it should be a bit al dente. Then cut it in smaller pieces.
Carefully mix potatoes, asparagus, onion, and dill. Put the salad on a plate.

Add any kind of seafood, smoked turkey, chicken or meat to create a tasty dish to serve beachside or at the lake with bread and drinks of your choice.
