I scream for ice cream

It just snowed on the East Coast and here's a recipe for ice cream? Well, yes, who wants to wait till next summer...

  • Make your own ice cream and add taste with peanut candy and chocolate.
  • We found the following on a wonderful Swedish blog called Linnéas skafferi (Linnéa's Cupboard), helmed by Linnéa, a freelancing food writer who supplies her followers with easy-to-make recipes. And this ice cream recipe we liked because it is super easy to make (needs no ice cream maker, no stirring every other second and no boiling), great tasting and quick to make. Three out of three. Who can wait till next summer?
    Recipe yields 6 servings.

  • Linnéa’s ice cream – so good it’ll make you want to make it in the dead of winter!
  • Ingredients:
    2 cups heavy cream
    1 can condensed milk
8 oz semi-sweet or dark chocolate chips (Hershey’s or Nestlé for instance)
8 oz Reese’s peanut butter baking pieces

  • Who can wait till next summer..?
  • In a bowl, beat the cream until it has soft peaks, then carefully add the condensed milk. Mix well. Add the peanuts and the chocolate. Stir and pour the mixture in a long baking pan. Sprinkle some more peanuts and chocolate on top as decoration. Put in the freezer and let sit there for at least 6 hours. Enjoy! For more of Linnéa’s recipes go to her blog: www.linneasskafferi.se
