January 'detox'

After all the Christmas food here's a spring cleaning for the body in the shape of a detox of sorts.

    It’s that time of the year, folks. After all the Christmas food, alltommat.se is offering a spring cleaning for the body in the shape of a detox. A detox is a modern type of fast, where one cleanses the body by taking a break from unhealthy food and food that may cause allergies. There’s of course a number of detoxes and cleanses, as well as fasts, out there, but one doesn’t have to make it a big project. According to alltommat.se, there are some simple rules to follow throughout the month of January. Avoid: Nicotine/tobacco, alcohol, coffee or tea with caffeine, candy, soda and pastries, processed food, white flour. Also try to limit your salt consumption, make sure you drink at least 2 liters of water (about 8.5 cups) a day, you can add lemon to the water and also drink green tea. Eat a lot of fruit and vegetables. Allommat.se gives the following samples of healthy detox foods: Onions (which helps the liver produce its own antioxidants and increases its ability to get rid of toxins), apples (full of fibers and apples also helps cleansing the liver), flaxseeds (they are rich in alpha linolenic acid, an omega-3 fat. If you’re looking for omega 3, then also add fatty fish like salmon and sardines as well as walnuts), broccoli (which stimulates the enzymes that boost the body's antioxidant defenses.   • Broccoli soup with goat cheese cream
    Ingredients:
    2-3 potatoes
    half of a yellow onion
    1 garlic clove
    2 teaspoons olive oil
    2 cups water
    1 cube vegetable bouillon
    150 g frozen broccoli
    4 oz chopped arugula
    salt and pepper
    Goat cheese cream
    50 g goat cheese
    1 Tablespoon milk
    half an apple
    Peel and slice the potatoes, onion, and garlic. In a pot heat oil and add potatoes, onion and garlic and cook for about 1 minute. Add the water and the vegetable bouillon cube (crumble it between your fingers). Let boil covered for about 10 minutes. Stir in the broccoli. Let boil another 2 minutes. Add the arugula and, using a mixer, make the soup smooth. Add salt and pepper. For the goat cheese cream: Mash the goat cheese with a little bit of milk and stir into an even cream. Peel and cut the apple into small cubes and mix with the cheese. Serve the soup with the goat cheese cream and a slice of rye bread.

    Ingredients
    2 cups flaxseeds (not the ground meal)
    2 oz. sesame seeds
    2 oz pumpkin seeds
    2 oz sunflower seeds
    2 teaspoons salt flakes
    2 teaspoons dried thyme
    10 oz water
    Mix all seeds, salt, and thyme and add water, lastly. Stir. Let sit and swell for about 30 minutes. Stir occasionally. Pre-heat oven to 155 F. Spread the batter out on a plate covered with baking paper. Bake in oven for 10 (yes, ten) hours.
