Potato salad with herbs

Few things work better this time of the year than a light and fresh potato salad.

    Ingredients:
    3½ lbs new potatoes, boiled and quartered
    6 scallions, chopped
    1 bunch radishes
    Dressing
    2 Tablespoon white balsamic vinegar
    4 Tablespoon vegetable oil
    1 teaspoon Dijon-type mustard
    1 garlic clove, grated
    4 oz fresh herbs (chopped basil, dill, chervil)
    salt and pepper


  • 1.Mix boiled and quartered potatoes, scallions and radishes in a bowl.
    2. In a smaller bowl mix vinegar, oil, mustard and garlic. Stir in the herbs and add salt and pepper to taste.
    3. Carefully add the dressing to the potato mix. Put in fridge until cool. Garnish with chervil.
