Apple compote with vanilla and lemon

Apple compote is easy to make and you can put it in the freezer for later. Serve for breakfast or as dessert with ice cream. The compote will keep in the fridge for two weeks. The recipe yields 8 servings.
    3 pounds apples
    1 vanilla pod
    8 oz water
    8 oz sugar
    2 oz freshly squeezed lemon juice
    4 cinnamon sticks
    Clean, core and dice the apples. Cut up the vanilla pod and remove the seeds. Mix apple, vanilla pod (and seeds) with the rest of the ingredients in a large pot. Bring to a boil and let cook for 5-10 minutes (the apple pieces should be soft, but not like apple sauce). Pour the apple compote into clean (preferably warm) glass jars. Let cool under lid.
