Vasterbotten cheese quiche

Vasterbottenspaj (Vasterbotten's cheese pie) is a popular classic in Sweden.

  • Västerbotten, a province in northern Sweden, is the home of this popular sharp cheese often referred to as the king of Swedish cheeses.

  • Västerbottenspaj (Västerbotten’s cheese pie) with grilled red pepper

  • You will need:
    1 8-inch pie plate

  • Pie crust
    3/4 cup all-purpose flour
    1/4 cup graham flour
    1 stick of butter
    2 Tbsp water
    1 egg white

  • Filling
    7 ounces grated Västerbotten cheese (or a hard, aged, sharp cheese. Västerbotten is these days available at IKEA stores along with Scandinavian specialty stores around the U.S.)
    2/3 cup milk
    1 egg
    1 grilled red pepper (or substitute with fried pork belly (små fläsktärningar) or small pieces of bacon)
    salt and white pepper

  • Instructions
    Pie shell: Put flour, butter and water in a food processor and mix to form a pastry
    Line a greased pie plate with the dough and place in fridge for 30 minutes
    Heat oven to 450°F
    Prick and baste pie shell with egg white
    Pre-bake pie shell for 10 minutes.

  • Filling: Cut the grilled red pepper in strips and layer them in the bottom of the shell
    Mix the rest of the ingredients for the filling and pour into pie shell
    Reduce temperature to 350°F and bake for another 30 minutes
    This quiche is at its best when served at room temperature.
